I love eating a good potato salad, especially if it is not too seasoned or covered with mayonnaise or other heavy sauces. Simple dressing is always the tastiest thing! 🙂 Last week I wrote you about purple potatoes salad, today I propose another recipe based on potatoes: grilled sweet potatoes. Sweet potatoes, also known as American potatoes, are a perfect side dish for any occasion. With their sweet and nutty taste, served grilled with a pepper flavored oil are a delight.
The sweet potatoes are tubers with a sweet taste, halfway between the yellow potato and the pumpkin to be clear. They are rich in fiber, vitamins and minerals. Studies have found a high concentration of beneficial substances not only inside but also in their skin. The advantage that sweet potatoes offer compared to common potatoes is that they have a lower glycemic index.
Since it is not part of our culinary tradition, at first glance it may seem difficult to use the American potato in the kitchen. In reality it is an ingredient easily replaceable to yellow potatoes or pumpkin. They can be baked, fried or boiled. I opted for grilling, then seasoned raw with oil, salt and pepper.
The important thing is to know that they can also be consumed raw, for example added in a salad. Given their delicate and sweet taste, they also lend themselves well to making desserts (perhaps for the next experiment :))
- 600gr of sweet potatoes
- chili pepper
- Wash the sweet potatoes carefully with all the peel, and cut into slices.
- Season with salt and brush the potatoes with a little bit of oil.
- Grill the potatoes over medium heat for about 10 minutes, turning them from time to time.
- Season the potatoes with oil, fresh chilli and parsley
