I am not fond of sweets, and I generally do not eat many sugars, not even the healthiest ones, and these Christmas coconut balls are perfect because they do not contain too many carbohydrates and are without refined sugar.
There was a period of my life in which I always made sweet preparations. Every weekend I experimented with some new recipes like cake pops, or decorations with almond paste or plastic chocolate. From that moment a sort of tradition was born, so I had to deal with dessert every Christmas. This year the recipe is inspired by my mother who loves coconut desserts, and I hope she will also love mine.
These coconut balls are simple, delicious and you absolutely have to try them! I’m almost thinking of giving them to my family and friends as a gift for Christmas. Good recipe and happy holidays 🙂
Ingredienti per 4 persone
- 100g of shelled almonds
- 100gr of coconut flour
- honey q.b.
- grated coconut q.b.
- First, chop the almonds finely.
- In a bowl put the minced almonds with the coconut flour and mix.
- Add honey a little at a time until you reach a compact consistency.
- Form the coconut balls of the size you prefer, then put them in the grated coconut and put them in the fridge for a couple of hours before serving.
